Easiest Ever Lemon Cookies

Last week I shared a rather complicated time-consuming, but yummy pastry recipe from my grandmother.

Here’s one that you can make in no-time: Lemon Crisps. This was one of my mom’s favorites and yes, it came right from the Duncan Hines Lemon Cake Mix Box.

You can omit the grated lemon peel and the pecan halves. It’s good either way. One word of warning: The lemon smell draws is pretty strong. These cookies should be stored separately from others.

Here goes:

1 pkg. lemon cake mix
½ cup cooking oil
2 eggs
1 tsp. grated lemon peel
Pecan halves (if desired)

Preheat oven to 350 degrees. Combine all ingredients and mix well. Drop from a teaspoon onto an ungreased cookie sheet. If desired, top each cookie with pecan half.

Bake at 350 for 10 to 12 minutes until golden. Cool on cookie sheet about one minute, then remove to rack to finish cooling.
